    Directions:

      Preheat the oven to 375°F (190°C).
    2. 2
      Adjust the rack to middle position.

      Line a 12-cup muffin tin with 10 paper cupcake liners.
    4. 4
      Dissolve the cornstarch in 1/4 cup of the milk; set aside.

      In a food processor fitted with a metal blade shred the coconut flakes for 30 seconds.

      In a large mixing bowl, stir the eggs and sugar together with a wooden spoon.

      One by one, add the cornstarch mixture, remaining milk, coconut, melted butter and lemon extract, stirring well after each addition. (Make sure to stir frequently to keep the coconut well distributed.).

      Ladle the custard into the paper cups, filling to 1/4 inch from the top and give it an extra stir.

      Bake for 25 to 30 minutes or until the coconut is nicely toasted.

      Cool completely in the tin before serving.

      Delicious! I used orange extract and topped my tarts with an extra pinch of unprocessed coconut! Baked for 45 minutes ~ Tagged for Rookie Recipes (due 10/31).

      I made this for my west civ project. Its VERY easy to make! However its very mushy in the middle but im gonna put them in the fridge overnight which will hopefully make them excellant, worth 5 stars:) But i put 4 becuase its very mushy, but i would reccomend to do this! Oh, and i added lemon zest ontop of eveything else and it added extra flavor. I would reccoment doing that as well, i made 30 servings and did 1 whole lemon zest.

      I have added a photo ( the one with the blue dish). The left tart is the coconut tart, the right one is a vanilla cream tart ( pastéis de nata).
      I have covered the tin with puff pastry before filling in the custard. They're super delicious! :)
