This is a Scandinavian recipe adapted from Tina Nordstrom's recipes in New Scandinavian Cooking. I love mushrooms and this is so good with the thyme and parmesan! Great as a side dish and it's also good on toast or with pasta. Enjoy!
I was short on time and needed a quick recipe. This was excellent. Be sure to follow the recipe and serve two mushrooms each as they shrink a lot more (it seemed) than when you cook them whole. Normally we have one each as a main course but this definitely would need to be served as a side or with the accompanying carbs to make you feel like you had a meal. We served ours with eggs. We love portabellas, and this was a great way to prepare them! I used 1/2 the amount of dill, and this was plenty for us. I like your idea of serving this over pasta, or on toast, I think next time I will do that instead of by itself. Thanks Sharon! Made for ZWT6 by a fellow Looney Spoon :)
