I didn't have nearly the amount of spinach called for in the recipe but still wanted to try it. Had to make it stretch so I served the mushrooms and dressing over a bed of raw spinach leaves. Very Good! I will try this again as written.

I truly enjoyed this one! Mushrooms were perfectly cooked and I did opt to use the garlic (which worked great). The simple spinach didn't need any seasoning, as the DRESSING. . .my oh my is that dressing fabulous!!! I will most certainly make this again. Made for VEG*N TAG. UPDATE: I have used the leftover dressing twice now, once on a simple salad of lettuce, tomatoes and black beans and then again on a salad of black beans, shredded carrots and celery. Fabulous on both. The dressing itself is worthy of 10 stars!!!
