Portabella Mushroom Salad

The mushrooms can be made in advance and refrigerated until ready to serve. This is my family's favorite salad, and it looks beautiful.

  1. Mushrooms: Season with salt and pepper, drizzle with olive oil.
  2. Broil 8-10 minutes on low.
  3. Dressing: Combine all ingredients and whisk.
  4. Place lettuce, tomatoes, mushrooms, and dressing in large salad bowl. Toss.

I really enjoyed this salad. I especially loved the sweetness of the dressing; it really goes well with the mushrooms, lettuce and cherry tomatoes! A definite keeper!

Excellent salad and the addition of the broiled mushrooms were a nice added touch. The dressing was very good and a hit with my company. A little sweet for me so I may cut back on the sugar next time. thanks for sharing.
