Portabella Mushroom and Goat Cheeseburgers

  • Remove stems from the mushrooms.
  • Clean mushroom caps.
  • In a small bowl, combine oil with garlic, rosemary, thyme, salt and pepper.
  • Brush on mushrooms.
  • Grill mushrooms on a hot (medium-high) grill about 3 minutes per side until browned and cooked through.
  • About 1-2 minutes before mushrooms are finished, turn them cupped side up and crumble cheese into them.
  • Grill 1-2 minutes longer.
  • Place one mushroom on the bottom half of each bun.
  • Top with basil leaves and tomato slices.
  • Combine mayonnaise with pesto.
  • Spread top buns with 1 tablespoon pesto mayonnaise and assemble sandwiches.
