Portabella Burgers

Portabella mushrooms are the largest of the edible mushrooms and are ideal for vegetarian burgers that are meaty without having any meat involved. to clean mushrooms - in general - don't wash them, because they will soak up the water. Instead, get some paper towels and pat them down as well as you can to get as much dirt off. also make sure there no stems on these portabellas, so they can fit evenly into the burgers.

This tasted great on a whole wheat bun. I quartered the recipe to make one burger. I actually cooked my mushroom under the broiler. I'm sure it would be even better using a grill outside. Good luck!

Directions

  1. Preheat barbeque to medium heat.
  2. Lightly brush each Portabella mushrooms (on the bottom) with vegetable oil and put them on the barbeque. Grill for five minutes.
  3. In the meantime, lightly saute the onion and garlic in more vegetable oil.
  4. Mix the bbq sauce with the flax seed in a small bowl. Brush the top of the mushrooms with the mixture, using up everything in the bowl, and then turn over the mushrooms. Grill for another five minutes.
  5. On the bottom side of the hamburger bun spoon the onion and garlic, add 1 slice each of tomato and cheese (You can use other cheese if you like), and the arugala. Top each salad with one portabella mushroom, and add more bbq sauce as desired. Close the burger with the top part of bun and enjoy!
