  • Melt butter in a pan, add onion, curry powder, ginger, jam, soy sauce and lemon juice, Stir over low heat until the jam has melted.
  • Place pork in a greased shallow ovenproof casserole in a single layer, pour sauce over, bake uncovered in a moderate oven about 25 minutes or until pork is tender.
