Pork With Apple Butter Sauce

Quick, easy dinner for 2 people. The horseradish adds a kick to the sweetness of the apple butter.

  1. Heat a nonstick skillet on medium high and spray with olive oil spray.
  2. Remove fat from pork and sprinkle with rosemary.
  3. Press rosemary into chops on both sides.
  4. Add to skillet and brown 2 minutes.
  5. Turn and brown second side 2 minutes.
  6. Sprinkle cooked side with salt and pepper to taste.
  7. Lower heat to medium low, cover and cook 2 minutes.
  8. A meat thermometer should read 160 degrees.
  9. Meanwhile mix apple butter, horseradish and cider vinegar together.
  10. Place pork chips on dinner plates and pour pan juices on top.
  11. Served seasoned apple butter on the side.

I made this using chicken cutlets -- the other white meat -- sliced into paillards. I loved how a few simple condiments came together into a rich sauce that was sweet, sharp and aromatic all at once. This one is a keeper. Like Culinary Queen I warmed the sauce a bit before topping the poultry.

123 Hit Wonders 2008 ~ I used bone-in pork chops so they took a bit longer to cook. I also added the apple butter mix to the pan juices to warm it up a bit as I didn't want it to be cold. Added a nice flavor to the pork. Thanks for sharing!
