Yes, I have to agree. This is ridiculously simple but so tasty. I don't care for green capsicums much so used an orange one.

  1. Place pork on a greased roasting tray.
  2. Brush on plenty of plum sauce on both sides.
  3. Spread vegetables over the pork and simply roast in the oven at 180°C for about 40-45 minutes turning once or until browned and caramelized.
