Pork Slides (Crockpot)

- 4 lbs pork shoulder, trimmer of fat
- 6 garlic cloves, minced
- 2 teaspoons cumin
- 2 teaspoons oregano
- 1⁄2 cup lime juice
- 1⁄2 cup orange juice
- 12 slices low-fat swiss cheese, halved (1/2 pound)
- 24 slicer rolls
- 3⁄4 lb low sodium ham, deli sliced
- 48 dill pickles
- 12 teaspoons mustard
directions
- Put pork in lightly oiled crock pot. Sprinkle with half of the garlic, cumin, and oregano. Mix remainder of the spices (cumin - oregano) and mix with the juices and pour over all in the pot. Cover and cook on low for 4-5 hours or until pork is cooked through. Transfer to a cutting board and break into pieces or shred with a fork. Skim fat and reserve juices.
- Dived cheese among tops of rolls and broil until melted.
- Layer bottoms of rolls with ham and pork and drizzle with juices and then layer with pickles,mustard and tops of rolls.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
