  • Place pork in self-sealing bag.
  • In blender, pulse parsley, onion and garlic until minced.
  • Add remaining ingredients; process to blend.
  • Add mixture to bag; seal and toss to coat pork.
  • Refrigerate overnight.
  • Preheat oven to 500 degrees.
  • Remove pork from bag; discard marinade.
  • Place pork on wire rack inside roasting pan; bake 15 minutes.
  • Lower oven temperature to 325 degrees; continue cooking until internal meat temperature reaches 155 degrees, about 1 hour.
  • Let stand 10 minutes before slicing.

It's delicious and simple to make.<br/><br/>Note for the time-strapped: I only had time to let the roast marinate for an hour, so instead of discarding the marinade as instructed, I poured it into the baking dish and let the roast cook in it.   2. We froze the roast in the marinade, put the whole thing in a crockpot (still frozen) went to work came home to a great meal!
     
  3. This was delicious! I only had a 2.5 lb roast but still needed the full time to cook. It was very juicy. Loved the mixture of the red pepper & lemon, it was really flavorful. Will definitely make again. Will probably add some potatoes & veggies next time to soak in the marinade flavor. I did make the marinade last night & let it sit overnight & all day. My husband cooked it & I had it waiting when I came home from WW. The house smelled incredible. Had it with pasta & roasted asparagus.
     
  4. I'm banging fists and stomping feet...YOU MUST TRY THIS MARINADE! Believe me, I've been through my share of marinades and the base of this one is no different, but what DOES make this particular one outstanding is the addition of pulverized onion and parsley. DH seared the roast on the BBQ until it was "almost" charred then wrapped it in aluminum foil with reserved marinade and continued to cook till done. The results were stellar. Throughout dinner we communicated via only one word---yuuuuummmm!
     
  5. WOW!! I wasted a ton of time on this site today looking for a good gravy recipe to compliment this pork roast. YOU DONT NEED IT!! This was UNREAL!! Juicy, tender and a FANTASTIC flavor. I followed the instructions to the letter even marinating overnight and would not change a thing. Thank you so much Mimi for making me feel like i can really cook!!!

Tweaks

  1. I have made this roast this way several times, following the recipe pretty much to a T. Today I didn't have any lemon juice but I had some key lime juice and added that instead. Wow, I didn't really think I could improve this recipe, but the key lime juice really makes an awesome marinade.
     
  2. This pork roast is AMAZING!! I only marinated the pork for 1 hour and it still was great. The only substitution was dried onions for the chopped onions (I can't take the smell of raw onions). Great recipe!

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
