Ingredients Nutrition

  • 1 cup sliced fresh mushrooms
  • 13 cup chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon reduced-fat butter
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 cup cubed cooked pork (about 2 pork chops)
  • 12 cup chopped green pepper
  • 12 cup chopped sweet red pepper
  • 1 teaspoon italian seasoning
  • 12 teaspoon salt, optinal
  • 1 pinch sugar
  • 12 cup uncooked instant rice

Directions

  1. In a saucepan, saute the mushrooms, onion and garlic in butter until tender.
  2. Stir in tomatoes, pork, peppers, Italian seasoning, salt if desired, and sugar; bring to a boil.
  3. Stir in rice.
  4. Cover and remove from the heat; let stand for 5 minutes.
  5. Stir before serving.
