  1. Heat the peanut oil in a wok until smoking.
  2. Season the pork with salt and pepper and stir fry until cooked, about 3-4 minutes.
  3. Remove to a bowl.
  4. Add the onion and stir fry for 1-2 minutes and add the garlic and cook 1 minute.
  5. Add the carrots and mushrooms and cook for about 2 minutes.
  6. Remove the mixture to the bowl with the pork.
