I really liked this recipe, especially as I don't like the taste of plain pork chops. It was pretty easy, although I think I may have used a bit too much cider vinegar. Also, the dijon mustard taste is a bit strong as I was finishing eating it, so I think next time I'll add a bit of regular mustard to tone it down. I used three smaller pork chops, and had one the next day on an english muffin for lunch, very good! Sorry the pictures came out a bit fuzzy, I didn't notice that until I had already eaten the meal and uploaded the pics.
