Pork Chops for the Slow Cooker

ingredients
- 6 boneless pork chops
- 1⁄4 cup brown sugar
- 1 teaspoon ground ginger
- 1⁄2 cup soy sauce
- 1⁄4 cup ketchup
- 2 garlic cloves, Crushed
- salt & pepper
directions
- Place pork chops in slow cooker. Combine remaining ingredients and pour over pork chops.
- Cook on Low setting for 6 hours, until internal temperature of pork has reached 160 degrees F.

Think I ended up cooking these for only 4 hours as the sauce was smelling so strong and the sugar smelled almost burnt. The chops were fall apart tender so I turned them off. Didn't have the problem of dry chops like other reviewers, they were lovely and tender, but I do agree that the sauce is a little strong. Think I would use less soy sauce next time, and that's strange for me as I adore soy sauce!

I too got this from All Recipes. But its actually already posted on food.com too with just two added ingredients (pepper flakes & onions). I cut the soy in half using 1/4 cup of it, and 1/4 cup of water. The chops were a little dry, and better the next day. But I wasn't a fan of the flavor of the sauce.

Yummy! Troop Angel's picture made me want to try this recipe. I was hesitant because of all the negative reviews on AllRecipes, but these were a keeper! My hubby raved over them. I used lower sodium soy sauce -1/2 cup(Kikkoman) , 1/3 cup brown sugar , a generous 1/4 cup of Heinz Organic ketchup(the best!) , 1 tsp ginger, 2 garlic cloves, a sliced shallot and a couple good dashes worcestershire.I added 1/4 cup water to the pot too. I seasoned my chops (I had 7 boneless) with Emeril's Essence and pepper and browned them before putting in the crock pot. I omitted the extra salt because Essence has salt in it . I did not have a problem with these being too salty or dry, they were yummy! I cooked them on low for 6 hours in my older crock pot that doesn't get as hot as my newer one. I basted and turned them over a few times while cooking them.I didn't need to thicken. I served them with lots of that yummy sauce over them, with mashed potatoes, peas&carrots and cresent rolls. I'm sure they will be great over rice or noodles too and I will get to find out because I'll be making these many more times. Sooooo easy! Thanks!

Update 8/16/06: I am back in Alabama where I was originally born & raised. I am living with my sister for the time being, and am loving every minute of it. We share cooking duties as both of us are now working. I love coming here to find new quick easy-fix meals that I can cook for my sister so she does not have to worry about it after a hard day at the office. She is an inside sales rep and I work as a project coordinator with a small construction firm.
My husband is still working in Texas for now, but that will soon change and he will be joining me here in Alabama. I just want everyone who reads my profile knows how much I love this site. You guys are wonderful.
I've always loved the Betty Crocker Cookbooks and Southern Living Cookbooks; their annual ones. Of course I love looking at any and all recipes for some reason even though I'm not a cook. I'm for anything that is quick and easy - in and out of the kitchen in record time. I especially love crockpot/slow cooker recipes.
I spend most of my time reading, but I do enjoy counted cross-stitch also. I love playing around in the water (not a very good swimmer).
My husband and I had Mason, an 8 year old Cocker Spaniel (who recently passed away - he will be missed very much as he was a huge part of our family), Pretty Boy, a 5 year old Cockatiel, and a recent addition to our growing menagerie, Pat, a blue conure whose vocabulary includes: "Hello", "Luv U", "What you doin", "All Right", and "Pretty Pat". We are both into collecting: He loves collecting Dragons & Wolves, and I'm into Tweety Memorabilia and Bells.
My dream is to travel through Alaska one of these days. I just love hearing about that state. My Mom & Dad came to visit me when I was still living in Texas after a 4-week vacation travelling through Alaska. The picutres they took are simply breath-taking.
