I love one dish meals....this is just another example of one of them.
- 1 medium onion, sliced
- 3 tablespoons oil
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1⁄2 teaspoon pepper, fresh cracked is best
- 4 pork chops, cut 1 1/2 inch thick
- 2 large potatoes, peeled and sliced
- 1 large carrot, sliced
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 cup frozen English peas
- In large skillet, saute the onion in oil until tender.
- Remove the onion with a slotted spoon and set aside, leaving the drippings in the pan.
- Combine flour, salt and pepper and coat the pork chopes.
- Brown pork chops on both sides in the drippings from the onions.
- Add potatoes, carrot, tomato and cooked onion and slowly bring to a boil.
- Reduce heat, cover and simmer for 1 1/2 hours, adding the peas during the last 15 minutes of cooking.
Outstanding recipe. I made this last evening for my wife and I. My chops weren't quite 1 1/2 inch thick so it did not take as long to cook. Also I used diced tomatoes with chilies we liked the extra kick. Will make this again for sure.
