I've made this a dozen times since I saw the recipe a few years ago. I love it as it is written, but my husband is not so crazy about pork so I used chicken. I've also substituted Broccoli Cole slaw mix for the regular.
I've made this several times and we just love it. The first time was without the red pepper flakes since we didn't have any at the time, and it was good, but for that extra heat, you really should put them in. As a variation, I've also made it using the ground ginger, red pepper flakes, 3 tbsp brown sugar, and soy sauce as a marinade. Just put everything in the pan when you cook the pork and add the water and corn starch at the end.

This was a good, basic recipe that was nice for a busy week night. I liked that it had the sweet from the pineapple and brown sugar, the salty from the soy, and the spicy from the ginger. As an added bonus,it was healthy.
My family practically licked their plates clean! The first time I made this I followed the recipe exactly and found there was too much pineapple for our taste. The next time I made it I used 1/2 can of pineapple chunks and cut the chunks into smaller pieces.
