Needed to use up some older apples and some pork that needed to be braised. This is what I came up with, and everyone loved it!

  1. Put top 7 ingredients into a zip lock or container with lid and shake until meat is completely coated.
  2. Heat 2 Tbsp Oil in large skillet and sear coated meat.
  3. Place meat into roasting pan or braising dish with carrots.
  4. Add leftover oil to skillet and saute onion, celery and mushrooms add to meat.
  5. Put butter, apples,cinnamon,ginger, and brown sugar into skillet and saute until sugar is dissolved and apples are well coated add 2 cups apple juice and balsamic vinegar reduce a few minutes.
  6. Pour over meat mixture and add more apple juice if needed.
  7. Preheat Oven to 300 degrees.
  8. Braise covered for 1.5 - 2 hours.
  9. (if needed) Mix cornstarch and water together and add to pot 15 minutes before finished cooking to thicken sauce.
  10. Served over rice.
