Pork and Apple Meatloaf

- 680.38 g ground lean pork
- 354.88 ml mcintosh apples, peeled and grated (about 3 apples)
- 118.29 ml breadcrumbs
- 14.79 ml chili powder
- 4.92 ml dry mustard
- 4.92 ml Worcestershire sauce
- 7 slice bacon, about
- 29.58 ml apple jelly, melted
- applesauce
- salt and pepper
directions
- Put the rack in the middle of oven. Preheat to 350°F Put parchment paper or foil paper on a baking sheet.
- In a bowl, mix well the pork, apples, breadcrumbs, spices and worcestershire sauce. Add salt and pepper generously.
- With the meat mixture, give the sahpe of a loaf of 10 x 4 inches on the baking sheet. Spread bacon slices, side by side diagonally on the loaf in a way to cover well the meat. Cook in oven about 1 hour. If you’re using a meat thermometer, it should read 180 F (82 c). Remove from the oven and baste with apple jelly. End the cooking under the broil until well golden.
- Serve with applesauce, mashed potatoes and green beans.

The apples do keep it moist and just melt away in the meat, leaving a bit of sweet fruitiness. I would prefer a mixture of meats, say, pork and turkey, maybe some ground veal, in this, but for a single-meat one, it's pretty good. I baked in a small loaf pan, and two large slices of bacon were more than enough on the top. I don't keep apple jelly, but used red chile marmalade as a glaze, which was the perfect choice. I would also add more chili powder OR some ground dried red chile (chipotle, maybe) next time. Had it with baked sweet potatoes and green beans, a satisfying meal.
