Poppy Seed Cake (Low Fat)

  • Mix all ingredients and beat about 2 minutes.
  • Pour into greased bundt pan.
  • Bake at 350 degrees for 1 hour or until done (will be golden brown).
  • Cool 2-3 minutes before removing from pan.

  1. This had good flavor, but was a little tough in texture, somewhat rubbery. I wondered about the beating for 2 minutes. I think this type of cake (bread) should just be stirred until ingredients are moistened and incorporated. Overbeating may cause toughness. But it was good topped with some non-fat vanilla yogurt. I also added some whole almonds to the bottom of the pan so the cake would have a "topping". Made for Spring 2008 PAC.
