  • Preheat oven to 450 degrees.
  • With butter, grease a regular muffin tin (that’s what I use instead of a popover tin since we try to multipurpose everything in our kitchen—plus, the popovers are littler making them just right for little hands).
  • In a large bowl, mix together flour and salt.
  • In a medium bowl, mix together the butter, eggs, and milk. Add to the flour mixture and stir gently until just blended. Do not overmix.
  • Fill the muffin tins 2/3 full.
  • Bake for 15 minutes at 450 degrees. Then reduce heat to 350 degrees and bake another 20 minutes until golden brown and crusty.
  • Remove from oven. Remove from tins. Puncture to let steam out. Serve immediately.
