      These are real good. They are nice fluffy corn muffins. They actually remind me quite a bit of Jiffy brand corn muffins. It took about 1 1/2 cups of popped popcorn, whirred in my blender, to yield just over 3/4 cup of ground popcorn. There's a light buttery flavor to the muffins. The texture was great but they didn't knock our socks off as being overly exciting. The addition of corn kernels, or shredded cheese, or maybe garlic & onion or something would really jazz them up.

      Fun ! I had a bag of Kettle Corn from our local Market Days yesterday so I gave this a try. Doubled this- came out fine- did stick to paper muffins wrappers a little- but very good- something different. Would make again !

      FUN!!! Lots of fun! This recipe is a playful baking experience and one the kids will enjoy being included in. I made a mountain of hot-air popcorn then per SaraFish's suggestion chopped it in the food processor. I ground enough to make about a cup and left the pieces different sizes to see what the texture would be like. This allowed tons of popcorn left for us to snack on as the muffins baked!! The muffins turned out light and fluffy with a nice buttery, sweet/salty taste. I used brown sugar and added a bit more than a single tablespoon...I think I had it in my head that that would give a hint of a caramel quality to the taste. This recipe was great as is and would be even more fun to play with some...you could think of different popcorn flavors such as cheddar, hot and spicy or kettle corn and try to achieve that with what you add to the mix! I used foil muffin cups which I never do because we wanted them to "travel" and I ended up with 8 nice sized muffins from the first batch. Then my husb. wanted to add nuts and chocolate chips to a second batch and I ended up with 6 big muffins (no cups used there...DH wanted those all for himself!!) Popcorn and muffins!! What could be more fun!!!

      Very good! Just don't use self rising flour I did and it was too salty but it worked well in my pinto beans. I used splenda also and omited the butter. I just sprayed some calorie free flavoring on afterwards. Yumm!
