Popcorn Muffins

This is from my grandmother's recipe box and I have not tried them yet. They sound odd but interesting :)

These are real good. They are nice fluffy corn muffins. They actually remind me quite a bit of Jiffy brand corn muffins. It took about 1 1/2 cups of popped popcorn, whirred in my blender, to yield just over 3/4 cup of ground popcorn. There's a light buttery flavor to the muffins. The texture was great but they didn't knock our socks off as being overly exciting. The addition of corn kernels, or shredded cheese, or maybe garlic & onion or something would really jazz them up.

  1. Sift flour, powder, salt and sugar together.
  2. Add milk, popcorn and egg, well beaten, and melted butter.
  3. Bake at 25 minutes at 350* in greased or lined muffin tins.
