Oh this was HEAVENLY and tasted exactly like pierogies! I had been thinking about attempting to make my own pierogies but every recipe I saw seemed sooooo time consuming. Then I saw this one. I made it the night before, put it in the fridge then threw it in the oven for about an hour the next evening. It came out absolutely delicious. I ended up halving the recipe to make a 9" square pan full instead of the huge pan this recipe is for, and it gave me more than enough for the three of us. I also happen to love the potato & onion pierogies better than potato & cheese, so I only used about 1/2 cup (of american cheese because velveeta is so expensive) I also used my mini food processor to make the onions almost a puree and added half of that raw to the mashed potatoes, then sauteed the other half just because I didn't want chunks of onion. Lastly, I threw the raw lasagna noodles in the boiling water along with the potatoes and just used a fork to remove them when they were done. Saved me from having more dishes to wash! I'm sorry this review is so long, but Manda, thank you thank you for such a fantastic, EASY way to enjoy pierogies!

This recipe was delicious. I used egg noodles rather than lasagna noodles, which was a fine substitution. Would definitely make this again - I'd love to try it next time without Velveeta but with some real cheese blend... Thanks for sharing!

This recipe was great! I substitued Onion Powder for the onions, I just sprinkled it over the noodle layers and it was just as YUMMY (I didn't have any around the house). I will take NitaCook's advice and next time cut the recipe in half as this was alot for just 2 people! Thanks.

This was very delicious. I had to sub the Velveeta with cheddar as I din't have any on hand, but it was tasty anyhow. It's a keeper for sure. Thanks.

OMG, for a carb lover like myself, this dish is Nirvana. This has all the things I crave--noodles, potatoes, and cheese. I followed your recipe exactly and wouldn't change anything about it. It is rich, heavenly and tastes better than the frozen pierogies (that is all I can get here in the South). I'll take this over chocolate any day. Thanks, Manda.

This was a perfect substitute for the pieroges my family loves. Since my family is small I halved the recipe and put it in a 8x8 casserole dish. I used the leftover mashed potatoes from Thanksgiving. I melted velvetta and cheddar in the potato mixture. I also put a layer of velvetta slices on top of the first layer. (We love cheese.) Each family member got to top of their helping with what they wanted. One used sour cream and bacon bits, the other loves spaghetti sauce with this. Thanks Manda for posting.

Hi All, I read all the other reviews. I want to share now..as a young woman/girl the gals all helped with the preparations. Doing it all myself seemed like such a task when I recently wanted to do the old fashion recipes. So I made 3 seperate fillings and used Won Ton wrappers in place of the pierogie. I did about 50. The whole family ate them all in one meal. But I was not pleased. I had plenty of all 3 fillings left and froze them. The recipe I found here for the potatoes, onion, mushroom, and cheeese filling I tried with the Lasagna noodles....turned out great! Thank you Manda

This is a family favorite dish. We have been making it since I can remeber We use white american cheese instead of velveta, and put layers of cheese in the casserole as well as in the mashed potato mixture. For a variation it is also good with a sprinkling of crispy bacon mixed in with the onions, or bacon and cabbage mixed in with the onions.

This was so easy to make, and my kids are fighting over the leftovers! Made 1/4 of the casserole without onions, for my daughter who does not care for them, and everyone is happy! We will be making this often, thanks for sharing!!

Ok Manda... this was the best dish I think I've ever had on here. (Can anyone tell I'm a major pierogie fan?) I followed the directions almost exactly but I liked the extra onion idea as mentioned by the above reviewer so I did that too. Ooooh la la! This honestly was fabulous. I will never again buy the frozen pierogies.
