Polynesian Cake and Cream Frosting

ingredients
- 2 cups all-purpose flour
- 1 cup oil
- 1⁄2 cup water
- 2 cups sugar
- 3 eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup chopped walnuts
- 1 (6 1/2 ounce) can crushed pineapple in juice
- 1 cup shredded coconut
- 2 cups shredded carrots

Frosting
- 1⁄2 pint heavy whipping cream
- 1 (3 1/2 ounce) package vanilla instant pudding mix
- 1 cup milk
directions
- Combine all ingredients in a large bowl and mix with a spoon. Pour into a greased and floured 13X9 baking pan and bake at 350* for 50 minutes. Cool.
- Prepare frosting by whipping all ingredients together and cover cake. Garnish with coconut and refrigerate.
