Polynesian Cake and Cream Frosting

"I tasted this cake at a church in Scranton, Pennsylvania many years ago and was fortunate to be able to find the lady who baked it and beg the recipe. She was sweet to share it, but I never got her name!! It's delicious!!"

  • Combine all ingredients in a large bowl and mix with a spoon. Pour into a greased and floured 13X9 baking pan and bake at 350* for 50 minutes. Cool.
  • Prepare frosting by whipping all ingredients together and cover cake. Garnish with coconut and refrigerate.

  1. An excellent recipe without fuss. It cooks evenly in the oven and has great texture. Two additional ingredients that I added were 2 tsps ground cinnamon and 2 tsps vanilla essence. Also a wonderful recipe for beginner cooks.
