Made these for Christmas with green/red M&M's, didn't use mini's, as I couldn't find them in the green and red. Be sure that they have browned a little when baking, my first batch wasn't brown and they didn't 'set' right. Makes a large amount; they keep well in the freezer. One of my hubbie's favorites this year!

This is a great recipe! I used a 10 oz bag of organic coconut and eyeballed the rest with shredded coconut so mine were a bit more chunky. :) Thanks for posting!

Mmmm, my son and I couldn't stay out of these so off to the freezer they went! I don't think mine looked as pretty as Gayla's photo but they tasted fine. I made them quite small as I want to add them to small 'samplers' to give to my colleagues. They will really brighten up the little plates. Thanks so much for posting your recipe. I will let you know how they held up with freezing.

Wow! I'll definitely be adding these to my Christmas goodie trays this year!! So, very easy to make & so tasty - rich & creamy. I couldn't find mini M&M baking bits so I just used regular sized M&M candy (without peanuts) & they worked fine. It's very easy to tell when the cookies are done - they look wet while cooking but once they are done, it is obvious as they look dry. It was a little bit tricky getting the cookies off the baking sheet but by taking my time, the cookies stayed intact.

After seeing Gayla's beautiful picture on the eating blog, had to try these cookies. Outstanding. Only four ingredients came together for a terrific little cookie. Had to cook a little longer because I used an insulated baking sheet (12 minutes).

Tasty cookies, especially considering the few ingredients and little effort involved. I scaled the recipe to half to use up some sweetened condensed milk left over from another recipe and baked the cookies on parchment paper. (The sweetened condensed milk was fat free and worked fine.) Thanks for posting!
