  1. 1. In a large sausepan, bring water and salt to a boil over high heat. Stir in polenta in a SLOW STEADY STREAM. Lower heat to medium and continue stiring 5 minutes, or until polenta is thickened to the consistency of hot cereal.
  2. 2. Remove polenta from heat and stir in the butter, pepper and cheese.

Straight-forward, yummy. Had it "soft" with dinner and then fried up the "hard" leftovers with butter for breakfast the next day. Going to make it again for company tomorrow--maybe add in other herbs and feta cheese to mix it up a little. Thanks.
