  • Place the pears in a saucepan then pour over the red wine, sugar and port. Add the juice and zest of the lemon, ginger and the cinnamon stick then bring to the boil.
  • Simmer in the red wine mixture until the pears are bright red and almost tender, about 20 minutes. Carefully remove the pears from the liquid, then boil the pear liquid until it has reduced and is syrupy.
  • Return the pears to the syrup and allow the mixture to cool until ready to serve.

  4. Divine! A simple, fresh and boozy dessert which had us all reaching for the LAST pear!! (I made it with four pears for three people.....maybe I should have done six as per the recipe?!!) I love port in recipes - I use it a lot, and this added a depth and flavour to this dessert which tipped it WELL over the 5 stars for us.....:-) I also love ginger - so this was the perfect dessert for me! Thanks Rita - no photos THIS TIME, as I was in a hurry and yours is so good! FT:-)
