As soon as the plums are ripe, I want to give this a try.

  1. Wash and quarter the plums. Fill them in a 4-quart mason jar.
  2. Add 3 cups of dark rum and 4 cups of sugar.
  3. Turn the jar once every day for 15 days to allow the sugar to dissolve.
  4. Filter out the fruit bits after 16 days.
  5. Plum Liquor is ready.

OH MY this is awesome!!! I use wild plums that are a bit tart. I also used white rum it was all I had. When I strained it I then processed the plums and stained them again and am going to use it in a plum rum cake. My neighbors are already talking how we are going to make this next year for the block party.
