Consider baking in either patty or muffin tins for lunch boxes Carrots can be shredded in food processor Nuts or candied ginger may be added Saltanas can be substituted for Raisins Gluten free flour may be used Freezes well, why not make two while the ovens hot. 250ml cup used

  1. Preheat oven to 180*c (350*F).
  2. Combine all ingredients.
  3. Spray cake tin with non stick spray.
  4. Pour batter into cake tin.
  5. Bake about 40 minutes.
