  • In a bowl, slightly mash the plantains, then set aside.
  • In a mixing bowl, whisk together the flour, baking powder & salt.
  • In a small bowl, beat in the eggs until fluffy.
  • To the flour mixture add the beaten eggs, crushed red pepper & butter & then the milk, beating with a fork until the mixture is smooth.
  • Stir in the mashed plantains, & add more milk if necessary ~ Batter should be of a dropping consistency.
  • Drop by spoonfuls into preheated deep fat at 375 degrees F & fry 4-5 minutes, or until evenly browned. Serve hot.

  1. These are amazing and light!!!! I really loved them. As I do not deep fry, I just heated up my cast iron skillet, brushed a little canola on the bottom and made them like little pancakes. I ate them with a little spicey mango butter on them. I like Allgirl's idea of adding jalapenos to them. I have put this recipe in my breakfast cookbook also. Fabulous!
     
  2. Just loved these, Syd! I think next time I may add some jalapeno, for heat, tho the red pepper worked just fine. I also fried mine in a cast iron skillet, instead of the deep fryer, so mine were more like (corn)'bread' or (pan)'cakes'. Tasty, nonetheless! I will serve these with a spicy jerk chicken, I think! I also made a little 'drizzling' sauce, but they would be good with syrup, or even a pepper jelly! Thinking out of the box, here... Thanks for sharing a tasty side dish, Syd!
     
  3. An easy breakfast or a mild side dish. These are quick to put together. They're mildly sweet, with a little bit of flavor and some good vitamins and minerals. I pan-fried them rather than deep-fried. I think you would have to use ripe (soft) plaintains - even grated, I don't think the green ones would have time to cook enough. You could add a little onion, garlic or fresh peppers for a more savory flavor, or use bacon grease in place of melted butter.
