ingredients
- 709.77 ml Simply Potatoes® Shredded Hash Browns
- 709.77 ml favorite tomato sauce
- 6 eggs
- shredded pecorino romano cheese
- 1 medium sliced zucchini
directions
- Sauté the hash browns and zucchini together in a large sauté pan in a little water.
- Once they start to soften and brown sprinkle some cheese on top in the pan.
- Pour the sauce on top.
- Crack the eggs right into the sauce, try to scatter them.
- Then sprinkle with more cheese.
- Put a lid on top, simmer on low to medium for about 8 minutes.
- Scoop into bowl and enjoy!

I'm a stay-at-home, homeschooling, Christian mother and wife. So obviously time with family and playing with the kids is high on th elist of priorities for me. I eat a vegan diet, about 65% raw. I prefer walking outside, and doing pilates in my living room. I do some mild weight/strength building as well. For destressing and release I blog online and journal (actually with paper and pen). I also enjoy watching The Renegade Health Show on You Tube. That's pretty much me :)
