  • In a small bowl, sprinkle yeast over 1/4 cup warm water and stir to dissolve.
  • Let sit until tiny bubbles start to form.
  • Place flour on a cutting board and make a well in the center.
  • Add yeast mixture, 1/2 teaspoon salt, and 1/2 cup warm water.
  • Mix ingredients with fingertips (add more water if needed), and form a ball of dough.
  • Knead dough vigorously (15 to 20 minutes) until it achieves an elastic texture.
  • Shape dough into 4 balls, and place on a lightly floured board.
  • Cover with a cloth.
  • Set aside in a warm place until the balls double in size.
  • Combine tomatoes, olive oil, oregano, and basil in a medium-size bowl and set aside.
  • Sprinkle a flat surface with flour.
  • Flatten a dough ball into a thin disc about 8 inches in diameter.
  • Place 1/4 cup of the tomato mixture on pizza, and dot with several mozzarella cubes.
  • Season with salt and pepper.
  • Repeat with remaining dough balls.
  • Place pizza on oiled baking sheets, and bake 5 to 7 minutes until edges are crispy.
