You can make this ahead, cover, and chill it overnight. It will be too firm to spread then, so let it stand at room temperature for 30 minutes before serving.

  • 12 cup pistachio nut
  • 12 cup blanched almond
  • 14 cup butter, cut into pieces (no substitutes)
  • 2 tablespoons honey
  • 1 teaspoon finely shredded orange rind
  • 3 tablespoons orange juice


  1. Combine pistachio nuts, almonds, butter, honey, orange peel, and orange juice in a food processor bowl.
  2. Cover and process until mixture is the consistency of butter.
  3. Serve at once or cover and chill. Serve with apple or pear wedges.
