This is my favorite Pinto Beans recipe...I only use one LARGE ham hock though. I boil my ham hock for about 30 minutes with minced garlic and onion. This is the 'broth' I use to cover my beans in the crock pot! I use all of the listed seasonings + hot sauce (my favorite part) and these beans are to die for! My whole family loves them - definitely no left overs :)...I like to add a tablespoon of vinegar to my OWN personal bowl. Served with a side of skillet cornbread & dinner is served! We really enjoyed this dish. I used some chicken broth to boil the ham hocks with additional water added. I left out the red pepper flakes and substituted jalapeno peppers which gave it a nice bite. The beans were very flavorful. Flavors blended very well together. Thanks for sharing. :)
I hated to give it a one without trying it but I am rating the recipe. There is no indication of how much water to use. I don't know how much is needed to boil the ham hock so it is seasoned properly.
I served this tonight for my family and they LOVED it. Even had seconds. I usually find ham and beans a little boring for my taste, but this was incredible. Definitely a keeper for me.
