Loved this soup not only for the great flavor but also for the ease of preparation, plus it's high in fiber and low in fat. This one is a keeper for us! Made for Spring 2012 Pick A Chef.

  1. Puree all ingredients.
  2. Cook on low heat for 15-20 minutes.
  3. Also can be cooked in a crockpot.
  4. serve with flour tortillas.
