5-Ingredient Fix Contest Entry. Looking for a different spin in finger food? Theses are simple to make and never disappoint. Great for pot lucks and parties.
- 473.18 ml Simply Potatoes® Shredded Hash Browns (frozen is fine)
- 2 eggs
- 59.14 ml flour
- 44.37 ml pesto sauce
- 118.29 ml mozzarella cheese
- Preheat oven to 350.
- In a mixing bowl, whisk eggs and flour. Add potatoes and fold together. In a muffin pan, spoon an equal amount of potato mixture and press into the bottom of each cup. Bake for 40 minutes or until edges are golden brown and crispy. Spread an equal amount of pesto on each then sprinkle with mozzarella cheese. Return to the oven to bake for another 5 minutes or until cheese is bubbly.
We made these at work and they were great. We froze the ones we didn't use and will eat them in a few months, can't wait!
These were so delicious that after tasting one I got so excited that I jumped up in the air. Unfortunately, I twisted my ankle when I landed and have been unable to work ever since. So worth it!
Wow!! This appetizer is not only very easy to make, it is incredibly delicious! These bites practically melt in your mouth with gooey, cheesy, pesto delight. This is a sure-fire crowd pleaser!! =)
