These are really super good. A healthy recipe that I created and love for breakfast during the week. I like to serve these with soy sausage patties. You can also add anything else that you want to this recipe.
- 1 (16 ounce) carton Egg Beaters egg substitute
- 1⁄3 cup salsa (you can add less if you like)
- 1⁄4 cup chopped onion
- 1⁄4 cup green chili
- salt and pepper
- cooking spray
- Spray non-stick skillet with cooking spray.
- Heat skillet on low.
- Add all of the ingredients and just cook like you would scrambled eggs until mixture is no longer runny and cooked through.
Even though mine were not pink this is a great basic recipe and I agree with Mrs. Jack, it would be delicious wrapped in a flour tortilla. I served the eggs with freshly baked biscuits and pickled jalapenos. Made for *Think Pink Tag* in honor of Breast Cancer Awareness month.
DELICIOUS! I made this recipe and wrapped in flour tortillas for breakfast on the go for DH. Thank you, Gingerbear, for a great recipe!!! Made for the Think Pink Tag Game In Honor of Breast Cancer Awareness, October 2008.
We really enjoyed this quick and easy to make dish. The hot salsa I used was really awesome in this recipe. Creamy, soft eggs with loads of flavor. Thanks for sharing, Made for Think Pink 2013
