I am playing Think Pink Tag and nowhere could I find pink banana bread so I made one; it is really pink.
- 118.29 ml yogurt
- 236.59 ml sugar
- 118.29 ml crushed pineapple
- 2 eggs
- 591.47 ml flour
- 1.23 ml baking soda
- 9.85 ml baking powder
- 4.92 ml salt
- 59.14 ml grenadine
- 2 bananas
- 28.39 ml pecans
- Mix yogurt, sugar, crushed pineapple, eggs, flour, baking soda, baking powder, salt, grenadine, bananas, and pecans together.
- Grease bread pan.
- Bake at 375 degrees Fahrenheit for 60 minutes or until done.
I made this as one large rectangular cake and it worked really well. As I had no grenadine I added some strawberries to pinkify it a bit. Made for Think Pink Tag.
Oh mmm, this bread is amazing! It tastes soooo yummy with the pineapple and banana combination! Loved the pecans in this! I doubled the amount as I thought there were too little in there. They really made the bread special, so Im glad I used more. :)
I was out of grenadine, but really wanted to try this, so I used a pinkish plum applesauce for this and it worked out nicely, although of course the bread didnt come out that pink.
Since I dont like my breads too sweet, I reduced the sugar to 1/4 cup and that was plenty for me.
