Pineapple Stuff (Bread Pudding)

This is great for brunches, especially with ham, the way cranberry sauce is good with turkey. My mother has always made this.

Ingredients Nutrition

  • 1 (20 ounce) can unsweetened crushed canned pineapple
  • 4 eggs
  • 14 cup sugar
  • 3 tablespoons butter
  • 4 -5 slices white bread, torn into pieces

Directions

  1. With mixer combined eggs and sugar. Stir in softened butter and pineapple (not drained). Stir in bread pieces until mushy.
  2. Place in greased casserole. Bake uncovered for 1 hour at 350°F May be made the night before and kept covered in the refrigerator.

This is a very tasty pudding, but when I opened the can of pineapple I thought it was waaaaaay too much for just 5 pieces of white bread. I upped the bread to 10 slices and yum!
