This is great for brunches, especially with ham, the way cranberry sauce is good with turkey. My mother has always made this.
- 1 (20 ounce) can unsweetened crushed canned pineapple
- 4 eggs
- 1⁄4 cup sugar
- 3 tablespoons butter
- 4 -5 slices white bread, torn into pieces
- With mixer combined eggs and sugar. Stir in softened butter and pineapple (not drained). Stir in bread pieces until mushy.
- Place in greased casserole. Bake uncovered for 1 hour at 350°F May be made the night before and kept covered in the refrigerator.
This is a very tasty pudding, but when I opened the can of pineapple I thought it was waaaaaay too much for just 5 pieces of white bread. I upped the bread to 10 slices and yum!
