Pineapple Skillet Chicken

  • Spray a large saucepan or skillet with nonstick spray.
  • Add chicken cubes.
  • Cook over medium-high heat until chicken is no longer pink inside.
  • Add remaining ingredients (except green onions, if using).
  • Stir well.
  • Bring to a boil.
  • Reduce heat to medium-low.
  • Cover and simmer, stirring occasionally, for 25 minutes, or until rice is tender.
  • During last five minutes of cooking time, stir in green onions (if using).
  • Serve immediately.

  1. YUM! This is delicious and very easy to make. The only thing I did different was to use the whole green and red pepper. I don't know what else to tell you except that you need to give this recipe a try. Made for * Spring PAC 2009* game
     
  2. This was good but seemed to be missing something or maybe there was too much vinegar for me? I used a 20 oz can of pineapple and no peppers (personal preference). It was very quick and easy. I will make again and play with the ingredients a bit.
