ingredients
- 4 boneless skinless chicken breast halves, cut into 1 inch cubes
- 591.47 ml low-fat chicken broth
- 396.89 g can pineapple chunks in juice, undrained
- 354.88 ml uncooked long grain white rice
- 177.44 ml carrot, finely chopped
- 118.29 ml chopped red bell pepper
- 118.29 ml chopped green bell pepper
- 78.78 ml ketchup
- 29.58 ml brown sugar
- 29.58 ml soy sauce
- 29.58 ml vinegar
- 177.44 ml chopped green onion (optional)
directions
- Spray a large saucepan or skillet with nonstick spray.
- Add chicken cubes.
- Cook over medium-high heat until chicken is no longer pink inside.
- Add remaining ingredients (except green onions, if using).
- Stir well.
- Bring to a boil.
- Reduce heat to medium-low.
- Cover and simmer, stirring occasionally, for 25 minutes, or until rice is tender.
- During last five minutes of cooking time, stir in green onions (if using).
- Serve immediately.
