A unusual fruit salsa for fish, pork, and just about anything else you can think of.
- 2 cups pineapple, minced
- 2 -3 medium garlic cloves, minced
- 2 -3 tablespoons of fresh mint
- 2 tablespoons lime juice
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon cumin
- cayenne pepper, to taste
- Combine everything in a tightly covered container and refrigerate.
- This will keep a long time.
