I had some pineapple left over and came up with this alternative to onion rings!
- 1 egg
- 1⁄4 cup pineapple juice
- 1⁄2 cup all-purpose flour
- 1 dash nutmeg (optional)
- 1 (8 ounce) can pineapple rings, drained save juice
- oil (for frying)
- Whisk together egg and pineapple juice.
- Lightly stir in flour and nutmeg to make a thick batter.
- Dip pineapple rings into batter.
- Fry in hot oil until lightly browned about 350 degrees Fahrenheit.
