  1. Combine rice, sugar, salt and vanilla.

Unless you have an incredible sweet tooth, I would recommend starting with 1/4 of a cup of sugar and working your way up. I started with 1/2 a cup and ended up throwing it in the garbage. Could just be my own personal taste, i'm not saying it might not be delicious for others.

This is the recipe I have been searching for since I was a child. My mother did not even remember having made it after I was born, but she must have because always when I thought of rice pudding, I had this flavor in my memory, but when I bought or made it, it was never what I remembered because it was missing the pineapple. The second time I made it, I accidently turned my whipped cream into butter, and all I had on hand was coconut milk so I mixed that in and it was great especially the next day! Note: It was a double recipe, so I used a whole can of coconut milk, dont know how much to use for a single recipe.
