  • Preheat oven to 350F degrees.
  • Boil rice.
  • Place 1/3 of rice in bottom of buttered baking dish.
  • Cover with half of the pineapple, half the brown sugar, and half of the butter.
  • Repeat with next 1/3 of rice and second half of pineapple, brown sugar and butter.
  • cover with last 1/3 of rice and pour over pineapple juice.
  • Bake covered for 30 minutes.

  1. Sorry, I am confused on “boil rice”. (Rookie). Do I just bring to a boil and drain?

  3. very easy, with little ingredients. i'm eating it right now in between typing sentences. i tried it with a 20oz can crushed pineapple and used the syrup it came in instead of juice. it worked great - but i suggest: use less pineapple if crushed is used (or better yet - add more rice!) dilute the syrup with water it was pretty sweet! now that i've had it warm, i'll try it cold tomorrow.

  5. I chose to make this rice dish to go with Recipe #234905. I chose to eye ball the sugar and pineapple to ours, I also used the pineapple juice along with water to make the rice. I could not have picked out a better rice dish.

Tweaks

  1. I love this! Didn't have butter or brown sugar. Replaced with coconut oil and raw sugar and sprinkled with nutmeg. The coconut oil made it like piñacolada flavored. It was Devine! Used half a cup more rice even before I read the reviews and it is a little too sweet. Going to find a recipe for my chicken tenders to go with it.
