I love pineapple!
- 2 cups nonfat sour cream
- 2 (8 ounce) cans unsweetened crushed canned pineapple, undrained
- 1 (1 ounce) package sugar-free instant vanilla pudding mix
- 6 vanilla wafers
- In a bowl, whisk the sour cream, pineapple and pudding mix until blended and thickened. Serve immediately with vanilla wafers. Refrigerate leftovers.
This is delicious, but I have a suggestion. For years I've been doing this same thing, but pouring it into a prepared Nilla wafer pie crust! Chill for 2 hours, then slice and serve. Garnish with sliced strawberries! Double yum :)
I was surprised by how good this pudding turned out. I was a little hesitant since it uses sour cream in the recipe. I did use lowfat sour cream since that is what I had. Made for Photo Tag
