    Here's a quick and healthy dessert or snack with tropical flavours. I'm adding this recipe for ZWT5. This recipe comes from the Vegetarian Passport Cookbook by Linda Woolven.

    Ingredients:

    Serves: 12

    Yield:

    Units: US | Metric

    • 1 cup dried pineapple
    • 1/2 cup shredded coconut
    • 1/4 cup sesame seeds
    • 2 tablespoons pineapple juice, use only as much as needed to make consistency right for forming into balls

    Directions:

    1. 1
      Add the first 3 ingredients to a food processor and blend until somewhat smooth.
    2. 2
      Add as much juice as is required to make the consistency right for forming into balls.
    3. 3
      Form into balls and allow to harden.

      So quick and easy to make. They hardened after about 45 minutes, and when I took them out, they made for a light dessert, with coffee. So good; it's just too bad they didn't last long.

      These came out perfect for me, but I didn't use any juice. I got the no-sulfur, low-sugar dried pinapple from the health food store. I'd like to try them with home-dehydrated pineapple to get no added sugar. Pineapple's sweet. Why add sugar? My 2- & 4-year-olds loved these and frowned when I put some away for later. Thanks!       Made these to snack on and while they tasted good they were very sticky. I made with just the first three ingredients as the directions state to add just enough juice to be able to form a ball and I could do that with out the juice. The consistency even after sitting was that of sticky raw cookie dough. Don’t have a good suggestion on how to resolve that issue. Sorry these sounded good and I love dried pineapple.
