  • 3 large fresh peaches, sliced
  • 2 58 cup crushed pineapple in juice, drained, reserve 1/4 cup juice
  • 13 cup raisins
  • 14 cup sucanat
  • 23 cup quinoa
  • 13 cup margarine (I use Soy Garden or Earth Balance) or 1/3 cup soy margarine (I use Soy Garden or Earth Balance)
  • 1 teaspoon cinnamon
  • 14 teaspoon salt
  • 1 teaspoon coconut extract
  • 2 teaspoons cornstarch, dissolved in reserved juice

directions

  • grease crock pot.
  • mix together fruit and pour into bottom.
  • mix remaining ingredients, then pour on top.
  • loosely cover (so steam can escape) and cook on high for 2 hours.

I have celiac disease and upon diagnosis knew that I (and everyone who eats gluten-free around me) will NEVER be deprived. I'm also intolerant to casein, and all of my recipes are gluten and casein free. I used to get sick from garlic and onions, so if they are missing from recipes - throw them in! I read cookbooks like novels, have an addition to thinking about food, and am equally obsessed with fitness and nutrition.
