A fun twist on the traditional oatmeal raisin cookie, this is a unique combination that is absolutely delicious. I brought these to a BBQ this weekend and they were gone before I knew it! I don't remember where I got the recipe- I copied it from a magazine at some point.
- Drain pineapple well, reserving 1/2 Cup of juice.
- In a large mixing bowl, beat butter and sugar until light and fluffy. Beat in egg, crushed pineapple and reserved juice. (Mixture will be very wet).
- In a medium bowl, combine oats, flour, baking powder, cinnamon, salt, and raisins. Stir into pineapple mixture.
- Drop by heaping tablespoonfuls onto greased baking sheets. Bake at 300 for 20-25 minutes or until golden. Remove to wire racks to cool. (Unfortunately I didn't copy down the oven temp when I copied the recipe. I played with it a bit and found 300 to work well for me, even though it seems a bit low).
I feel in love with pineapple oatmeal cookies from a small bakery in Washington, so went to find a recipe well this is not it. I made these cookies and was not happy at all. they turned out more like a small muffin texture. We ate 1 apiece and I threw the rest out, the only thing that was great is that the recipe didnt make the 7 dozen it promised I got 25 to 30 cookies about the roundness of a 12 oz coke can. I do not recomend these cookies, they were not for me.
