      Very moist muffins...but they were missing something--either vanilla, sugar, or salt--not sure. What I did end up doing was dipping the tops in melted butter and then in light brown sugar. That did the trick for us. I will make these again and add just a teensy bit more sugar to the batter.

      These muffins are right up my alley! They're very mellow and not too sweet at all. I did take other reviewers' advice and added in some of the pineapple juice (about 4 TBSP) to the batter. They came out wonderful, not to mention very pretty. I will make these again, no doubt! Made for PAC Spring 2010

      These are a good basic muffin. We found them a bit too dry for our tastes so I think next time I'll use a bit of the pineapple juice also in the batter as that will give it a bit more depth of flavor too (maybe up to 3 tbls is my best guess). I do love how they are so low in calories and are much more healthy than many muffin recipes! Made for 123 Hits.

      These were a good base, but they needed something, I am not quite sure what -- perhaps a little more sugar? I will play around though, because I think they have great potential for a regular menu item :)

      I loved these muffins. They taste so natural, not too sweet not too greasy. They're a little bit dry the next days so I put one muffin in microwave 20 seconds and it's perfect. For me they're perfect when watching what I eat. Thanks Nemokitty :) Made for Holiday tag
